This Russian mixed meat soup makes around two quarts of soup and uses a variety of different meats. You can substitute any of the meats for any other type of meat depending on your tastes and what is available. It is best served with a dollop of sour cream, as the Russians eat it.

This recipe is best made the day before you want to eat it, chilled in the refrigerator and then warmed up when it is served. This will give the flavors of the soup more time to combine better and will make it taste even better.

To make this soup you will need

2 1/2 lbs beef chuck on the bone
2 tablespoons butter
1/4 lbs hotdogs, in 1/4 inch slices (can substitute with other flavored sausages for variation)
1 veal kidney
1 tablespoon capers
2 finely chopped onions
1/4 lb ham, in 1/2 inch cubes
6 cups water
4 oz pickled mushrooms (fresh can be used if nto available)
6 tablespoons flour
2 bay leaves
2 julienned dill pickles
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/2 cup chopped, pitted black olives
2 peeled, chopped fresh tomatoes
1 teaspoon salt
1 tablespoon tomato paste
1/2 sliced lemon

Making this soup is easy either in a Cuisinart soup maker or pots and pans. Simply boil the beef chuck in the water for about ninety minuets to make a rich and juicy broth. Remove and throw away the beef bones.

Next slice the kidney and cover it lightly in flour. Saute it in the butter with the onions. Then stir the ham, onions, hot dogs and kidney in to the beef broth. Cook it for a further twenty mintues and then add the other ingredients. Then cook it for about fiften minutes more.

And that's it… a simple recipe for a delicious home made soup with some interesting flavors. It's very easy to experiment with this soup and change the flavors… what about substituting the hot dog for a nice Bavarian sausage?
